IDENTITY
This confidential cuvée is the fruit of a plot-by-plot selection from the limestone hillsides overlooking the noble valley. A blend of barrel ageing and concrete, this Sylvaner will prove to be a gastronomic wine.
VINIFICATION
Hybrid fermentation and ageing: half the cuvée was vinified in oak barrels, and the other half in concrete ovoid tanks, for 10 months.
Pale yellow with golden highlights
Beautiful woody and toasty notes. Fruity freshness on opening (white peach, quince).
Powerful and full-bodied. Salivating acidity melts into the wine, revealing aromas of grapefruit and pear.
Sylvaner Exception goes perfectly with poultry and fish dishes in sauce, pan-fried scallops, or dry goat's cheese. We recommend decanting this wine to appreciate its complexity.
